“Mes de la Herencia Hispana con Cocina Canola” Recetas y fotos cortesía de CanolaInfo Recetas creadas por el chef Danny Godínez #CocinaCanola @CanolaInfo




 

Porciones: 2

Ingredientes:

Ensalada:
8 oz de ensalada mixta orgánica 225 ml
2 oz de queso manchego 50 ml
Aderezo:
1 lb. de uvas rojas 450 ml
1/3 taza de azúcar moreno 80 ml
2 oz de agua 50 ml
½ taza de vinagre de vino tinto - 125 ml
1 taza de aceite de canola - 250 ml
½ cdta. de sal


Preparación:

1.      En una olla mediana, agrega el agua, el azúcar moreno y las uvas. Cocina hasta extraer todo el jugo de las uvas y las uvas estén blandas.
2.      Escurre el jugo de las uvas en un bowl mediano.
3.      Mezcla el concentrado de uva con el vinagre de vino y el aceite de canola.
4.      En un bowl grande, mezcla la ensalada mixta con el aderezo y agrega el queso.


*Refrigera la vinagreta que sobre por 5 días máximo. El aceite de canola y el vinagre se separarán, agita la vinagreta cada vez que la vayas a usar.


Medley de Mini Zanahorias Asadas

Un acompañamiento exquisito y sofisticado que puedes hacer en menos de 10 minutos.

 

Porciones: 1

Ingredientes:
8 mini zanahorias
3 cdas. de aceite de canola 45 ml
½ cdta. de sal y pimienta 2 ml
1 taza de agua 250 ml

Preparación:
1.      Hierve el agua, agrega las zanahorias y deja hervir por 5-7 minutos aproximadamente.
2.      Retira el agua.
3.      Calienta la parrilla a fuego medio.
4.      Pincela la parrilla y las zanahorias con el aceite de canola.
5.      Agrega sal y pimienta al gusto.
6.      Asa hasta que estén tiernas y doradas en algunas partes.




Salsa Verde
Picante y llena de sabor, la salsa verde es una salsa mexicana versátil que puedes disfrutar en una gran variedad de platillos, como tacos, carnes o pescados. 


Porciones: 4 tazas


Ingredientes:
¼ lb. de chiles jalapeños 125 ml
2 tazas de aceite de canola 500 ml
½ lb. de tomatillos 225 ml
1 ½ cdta. de sal 8 ml


Preparación:

1.      Licua los jalapeños, el aceite y los tomatillos.
2.      Agrega sal al gusto.
3.      Sirve en un bowl mediano. ¡Disfruta!


 Pescado al Sartén con Aceite de Canola Infusionado con Cebollín
Un pescado al sartén aderezado con aceite de canola infusionado con cebollín.


Porciones: 4


Ingredientes:

Pescado:
4 8 oz/ 225 g filetes de barramundi o trucha de Tasmania
4 cdas. de aceite de canola 60 ml
2 cdtas. de sal y pimienta 10 ml

Aceite de canola infusionado con cebollín:
2 oz de cebollín 50 ml
1 taza de agua 250 ml
1 taza de aceite de canola 250 ml


Preparación:

Pescado:
1.      Sazona el pescado con sal y pimienta.
2.      Agrega una cucharada de aceite de canola en un sartén.
3.      Cocina un filete de pescado a fuego medio-alto, 5 minutos de cada lado.
4.      Repite con los demás filetes.

Aceite de canola infusionado con cebollín:
1.      En una olla mediana, agrega el agua y el cebollín. Deja que hierva durante 8 minutos.
2.      Retira el agua.
3.      Licua el cebollín y el aceite de canola.
4.      Cuela con un colador extra fino.
5.      Vierte el aceite sobre los filetes de pescado.


 Filete New York con Salsa Picadillo
Una receta para los amantes de la carne, con el intenso y exquisito sabor del picadillo. Sorprende a tu paladar con esta combinación única.



Porciones: 2

Ingredientes:

Filete:
2 12 oz/ 350 g filetes corte New York
1 cdta. de sal y pimienta 5 ml
2 cdas. de aceite de canola 30 ml


Salsa Picadillo:
5 tomatillos, picados 1 lb., 450 ml
¼ manojo de cilantro, picado 50 ml
¼ manojo de perejil, picado 2 oz, 50 ml
¼ taza de vinagre blanco 60 ml
2 dientes de ajo, picados .5 oz, 150 ml
¼ de cebolla, picada 5 oz, 150 ml
1 taza de aceite de canola 250 ml
1 pizca de orégano
1 cdta. de sal 5 ml

Preparación:

Filete:
1.      Rocía la plancha con aceite de canola.
2.      Sazona el filete con sal y pimienta.
3.      Asa cada filete a la parrilla durante 15-25 minutos por ambos lados, según el termino de cocción deseado.

Salsa Picadillo:
1.      Mezcla todos los ingredientes en un bowl mediano.

Sirve cada filete con salsa picadillo arriba y al lado.



*Refrigera la salsa picadillo que sobre por 3 días máximo. La puedes disfrutar en una gran variedad de platillos, ya sea carne, pescado o ¡hasta con totopos!

Top Sliders from Across Southern California Will Once Again Take Over Dark Harbor with a Special Collaboration Performance

The Queen Mary’s Dark Harbor, SoCal’s most terrifyingly authentic haunt, will once again welcome elite sliders from across Southern California to perform in the one-of-a-kind Sliders Unite 2: Hell at the Harbor on Wednesday, October 25 and Wednesday, November 1 with two performances at 9:30pm and 11:30pm.

Posthumously honor music icon Selena Quintanilla, “The Queen of Tejano Music,” with the dedication of the 2,622nd star on the Hollywood Walk of Fame, on Friday, November 3

Hollywood Chamber President/CEO and Walk of Fame emcee Leron Gubler and Selena’s family will unveil her star in the category of Recording in front of the Capitol Records building located at 1750 N. Vine Street in Hollywood, CA.

Google Celebra a Selena con un Google Doodle

Today we celebrate Selena Quintanilla: Mexican-American music & entertainment icon, fashion trendsetter, passionate entrepreneur, community philanthropist, and one of the people who taught me growing up that no matter who you are or where you come from, anything is possible.

The video Doodle explores the story of her life set to one of her most iconic songs: “Bidi Bidi Bom Bom”.  Although October 17 specifically marks the date of Selena’s first studio album release with Capitol EMI (self-titled “Selena”), we are taking the day to celebrate her life and continued impact on various aspects of popular culture as well as in the lives of her adoring fans.

The doodle has been two years in the making and we worked in close collaboration with her family on it, especially with Selena’s sister Suzette, who visited Google San Francisco Office this past week to unveil the doodle internally to Googlers.

“My family and I are honored and extremely excited to have worked with Google on this Doodle and exhibit launch, not only as a way to celebrate Selena’s life and the dreams she achieved, but as a tribute to Selena's fans around the globe. This project is just yet another testament to the power of Selena’s legacy, which is still going strong 22 years later. Selena has always transcended cultural boundaries and having this Doodle featuring a strong, Latina woman on the homepage of Google around the world is a perfect example that. We hope that everyone - both fans and people learning about Selena for the first time - enjoys this celebration and feels the positivity and hope Selena embodied and still continues to represent today.

Born in Lake Jackson, Texas on April 16, 1971, Selena’s talent shone from an early age. Strumming Nat King Cole’s “I’m in the Mood for Love” on guitar, Selena’s Father listened to his daughter sing along, and immediately knew the bright future before her.

With encouragement from their father, nine year old Selena and her older siblings A.B. (guitar) and Suzette (drums) formed the beginnings of the Tejano sensation Selena y Los Dinos. Born in Texas, Tejano music (or “Tex-Mex”) blends Mexican and American sub-genres like pop, polka, ranchera, and cumbia. Widely popular across the TX/Mexico border since the 1800s, Selena y Los Dinos’ infectious brand of Tejano music popularized the genre to audiences globally.

First playing at the family restaurant, quiceañeras, and fairs, the band’s humble beginnings - including sitting on equipment due to the lack of formal seating in their inaugural tour bus “Big Bertha - eventually led to high profile touring. But they also fought through hard times and adversity. In fact, Selena was frequently discriminated against in the male-dominated music genre, and some venues even refused to book the band for shows.

Despite all this, Selena’s talent, energy, and perseverance easily won the hearts of a rapidly growing fan base. In 1986 she was awarded the Tejano Music award for “Female Vocalist of the Year,” catapulting Selena y los Dinos to Tejano stardom. Other milestones followed, solidifying Selena’s legacy as “The Queen of Tejano.” She released her first studio album with Capitol EMI (self-titled “Selena”) on this day in 1989, consistently straddled the top of the billboard charts, and won a Grammy for best Mexican/American album of 1993 -- the first female and youngest Tejano artist to win the award.

Selena was also much more than a talented musician. A fashionista and trendsetter, she often designed and created entire outfits for her performance wardrobe. In her free time, she was also active in community service, including being a strong advocate for education.
Most importantly, Selena became a beacon of inspiration and hope for the Latinx, immigrant, and bicultural communities around the globe. Her story of embracing and celebrating all parts of her cultural heritage and persevering in the face of adversity forged an emotional connection with millions.

As the daughter of a Mexican immigrant single mom living in a small (primarily white) town in rural Texas, I was one of the people Selena and her legacy profoundly influenced. My love of music started with her. One of my dearest childhood memories is of my mom and I belting Bidi Bidi Bom Bom and Techno Cumbia in the family van during our annual road trips to Mexico. I even sang Selena classics in talent shows across northeast Texas.

Aside from incredible dance moves and how to belt some serious notes, watching Selena taught me that being Latina was a powerful thing, and that with hard work and focus I could do whatever I set my mind to. Watching her showed me that this hybrid cultural identity of mine was a valuable gift I should embrace. Watching her made me proud of being Mexicana.
It’s incredible that Selena’s legacy grows even larger with time. She continues to show Latinx, immigrants,  and bicultural communities around the world to be proud of who they are and to embrace their differences. Also, to work hard for your dreams because doing so makes your achievements that much more meaningful.

So the best thing I can say is thank you, Selena. Thank you for being a role model and a hero to a little Latina girl in Granbury, Texas. Thank you for teaching her that she could dream big and make it. And thank you for all the inspiration and joy your music and legacy continues to bring to the world.
